How to Use & Storage

Cauliflower is very versatile and easy to cook.
The most common dish is aloo gobi - cooked with potatoes and spices. You can also make dry sabzi, add it to curries, or use it in fried rice and Indo-Chinese dishes.
Roasting cauliflower in the oven with a little oil and spices gives it a slightly crispy and different flavour compared to regular cooking.
Before cooking, cut it into florets and wash properly.

How do I clean cauliflower to remove insects hidden in the florets?

Soak the separated florets in a large bowl of cold water with a tablespoon of salt for 10–15 minutes. The salt water draws out any insects hiding in the crevices between the florets. Rinse thoroughly under running water afterwards. This is standard practice for all cruciferous vegetables where the compact structure can shelter small insects.

Why does cauliflower turn yellow or brown after cutting?

Cut cauliflower oxidises when its flesh is exposed to air - the glucosinolate compounds react with oxygen and produce a light yellowish or pinkish discolouration. This is harmless and does not indicate spoilage. To prevent it, use immediately after cutting or store cut florets submerged in cold water in the refrigerator until ready to cook.

Is organic cauliflower available year-round in Mumbai?

Cauliflower is primarily a cool-season crop that is at its best quality and most widely available from October through February in Maharashtra. Off-season production exists but typically at lower quality and higher cost. What is the best cooking method for preserving cauliflower's nutritional value?

Roasting and light stir-frying preserve the most nutrients because they involve less water contact and shorter cooking times than boiling. Boiling cauliflower in water causes water-soluble vitamins (C and folate) and glucosinolates to leach into the cooking water - this is nutritional loss that cannot be recovered unless the cooking water is used in soups or gravies.

Can the green leaves of cauliflower be cooked and eaten?

Yes - the leaves attached to the cauliflower head are entirely edible and nutritious. They can be washed and added to dal, used in a simple stir-fry, or added to vegetable stock. Discarding them is wasteful, as they carry the same nutritional benefits as other Brassica leaves.
