The bright green colour of fresh French beans comes from chlorophyll, which is sensitive to heat and acid. Overcooking, or cooking in acidic conditions, breaks down the chlorophyll and turns the beans grey-green. To preserve colour, cook briefly at high heat, avoid adding acidic ingredients like tomato or lemon while the beans are still cooking, and serve promptly after cooking.
