It also provides fibre, vitamin C, and potassium. Even though it tastes slightly sweet, it’s still low in calories, which makes it easy to include in everyday meals.

How to Use & Storage

Start by peeling the pumpkin and removing the seeds from the centre. Then cut it into cubes or slices depending on what you’re making.
A simple bhaji with mustard seeds, curry leaves, and a little jaggery is the most common way to cook it in Maharashtrian homes. It also works well in soups, dals, sambar, or even as a sweet dish like halwa.
