What is ratali in English and is it different from regular potato?

Ratali is the Marathi name for sweet potato - botanically Ipomoea batatas, a root vegetable from a completely different plant family than regular potato (Solanum tuberosum). Sweet potato has orange flesh with a naturally sweet flavour, a higher beta-carotene content, and a different nutritional profile from regular potato. The two are not interchangeable in cooking, though both are versatile and nutritious in their own right.

Does organic sweet potato need to be refrigerated?

No - sweet potato should not be refrigerated. Cold temperatures cause the starch to convert and produce a hard centre and altered flavour. Store at room temperature in a cool, dark, ventilated space - a basket or cupboard away from direct light is ideal. This is the same principle as potato storage.

Is sweet potato good for diabetics?

Sweet potato has a moderate glycaemic index (lower when boiled than when baked or fried), and its dietary fibre helps moderate the blood sugar response. It is nutritionally considered a better carbohydrate choice than refined starch sources for most people. However, it does contain significant natural sugars and carbohydrates - people managing diabetes should consume it in appropriate portions as part of a balanced diet and in consultation with their doctor or dietitian.

Can the skin of organic sweet potato be eaten?

Yes - the skin of organic sweet potato is edible and nutritious, containing a portion of the vegetable's fibre and some concentrated nutrients. Because Prakritii's ratali is organically grown with no pesticide residues, the skin is safe to eat after thorough washing. In boiling and roasting preparations, leaving the skin on is nutritionally preferable. For halwa and tikki preparations, peeling is standard.

Why is Prakritii's organic ratali more deeply orange than some market varieties?

The depth of orange colour in sweet potato flesh is directly proportional to its beta-carotene concentration - a more intensely orange flesh indicates a higher level of this antioxidant pigment. Organic growing conditions, which allow the root to develop fully in naturally managed soil without synthetic inputs, support the full expression of the variety's natural colour and nutritional density. Pale or lightly coloured sweet potato has less beta-carotene regardless of how it is grown.
