What is the difference between chavalai and lal math?

Both are varieties of amaranth (Amaranthus species) and are nutritionally similar, but chavalai has green leaves while lal math has deep red or magenta leaves. The red pigment in lal math comes from betacyanin antioxidants. Chavalai has a more neutral flavour and does not bleed colour into dishes, making it more versatile for everyday cooking.

Is chavalai the same as rajgira bhaji?

Rajgira bhaji, chavalai, and lal math all belong to the Amaranthus plant family. The term rajgira bhaji is often used loosely for green amaranth leaves in Maharashtra. Chavalai specifically refers to the broad-leafed green amaranth variety most commonly sold in Mumbai markets — the same plant, with slight regional naming variation.

Can chavalai be given to children regularly?

Yes — green amaranth is an excellent leafy vegetable for children. Its protein, calcium, iron, and vitamin A content supports bone development, immune function, and growth, and its mild flavour is more easily accepted by children than more bitter greens like methi. Cook it simply with garlic and coconut for best results with young eaters.
