Yes - this is one of the most important advantages of organically grown, unwaxed lemons. The zest of organic nimbu is clean and safe to use directly. The zest contains concentrated essential oils, flavonoids, and d-limonene that add a more complex citrus flavour than juice alone. Use a fine microplane or zester to grate only the yellow outer layer - the white pith beneath is bitter and should not be included.

How do I maximise juice yield from a lemon?

Bring the lemon to room temperature if it has been refrigerated - cold lemons yield less juice. Roll the lemon firmly against the countertop with the palm of your hand for 10–15 seconds to break down the internal membrane structure. Cut in half across the width (not lengthwise) and squeeze.
